Remembering at the wrong time
This morning as I was making coffee I noticed my travel mug on the counter. This was a bit of a relief as I knew over the weekend it was sitting at my desk at work where I forgot to bring it home. I'm covering for a co-worker while he is out and not at my own desk as much and I left without it on Friday. So for that reason I was glad to see that I had remembered it last night.
This morning it was good to see there was something I remembered. Just last night I baked the crust for taco pizza. Its a recipe you need to prepare the night before. I made some over night oats, put all the dinner stuff away or cleaned it in the dish washer and I went to bed. On the weekends my wife and I make a dinner menu for the week and we purchase what we need when we go shopping. She has taken the time to do it on her own often and she even got a magnetic whiteboard menu we keep on the refrigerator. Every week she writes the dinner menu on there. The children love knowing what is going to be for dinner and it is a good reminder for the adults too. Its very helpful for me when I remember to look at it.
I was thinking of the menu and I knew we had taco pizza coming up and without looking at the refrigerator that was right next to my head I prepared for that meal thinking it was for today, but as it turns out that is for tomorrow. Does that happen to you? Sometimes when you do remember, you get it wrong anyhow.
But I saw that cup and I thought at least I remembered something (after having forgotten it all weekend). I think the taco pizza crust will be fine in the refrigerator an extra day.
If you want to make your own taco pizza, and you remember, this is the recipe:
